Specialty Coffee Athens: Behind Our Perfect Espresso
By MOUR Athens

The search for great specialty coffee in Athens often comes down to one thing: consistency. It's that feeling of knowing the espresso you loved yesterday will be just as balanced and delicious today. It’s a simple goal, but achieving it requires a deep focus on the details. For us, every single shot is a craft, and it all starts before the water even hits the coffee.
Our Tools for Consistent, Delicious Espresso
You’ll hear the steady hum of our Fiorenzato grinder as we prepare each dose, measured to the tenth of a gram. Then comes the most critical step for consistency: tamping. We use a PUQ Press automatic tamper to ensure every puck of coffee is pressed with the exact same force. This removes human variability and guarantees an even extraction. No channeling, no sour or bitter notes. Just the pure, clean taste of the bean.
This isn't about replacing the barista. It's about giving our team the best possible tools so they can focus on what matters most: dialing in the perfect recipe and serving you an incredible cup of coffee.
Currently Pouring: KUDU Coffee’s Colombia Los Idolos
All this precision would mean nothing without exceptional coffee. Right now, we’re incredibly excited about what’s in our hopper: a single-origin from Colombia called Los Idolos, roasted beautifully by our friends at KUDU Coffee.
Pulling a shot of this coffee is a treat. It has a vibrant, almost candy-like sweetness and a juicy acidity that reminds us of crisp red apples. The finish is what really makes it special, a silky and smooth body that lingers just long enough. It’s a complex and rewarding espresso, and our workflow ensures you get to taste all of its unique character.
It’s a lot of work for a small cup, but we believe it’s worth it. That pursuit of the perfect, repeatable shot is what drives us every day.
Ready to taste the difference? Stop by our Kerameikos shop and let us pull you a shot. We'd love to share it with you.
